How Tipping Works

TIP PICTURE

TIP PICTURE TIP PICTURE

Tip jars are everywhere — from your local coffee shop to the deli — blurring the lines of gratuity, making it that much more confusing to know when to reach for your wallet. So how do you know when you should tip and when you shouldn’t?

If you’ve ever worked in the hospitality industry — waiting tables, tending bar, carrying luggage — you’ve probably depended on tips from your customers to make ends meet.

Many people who haven’t worked in this industry don’t realize that the servers, guides, drivers, concierges and others who help improve our dining and traveling experiences sometimes aren’t paid even minimum wage by their employers — not to mention cost-of-living increases...

Do you think your kitchen is organized? Well it probably is, but I’m going to talk about how to make sure your kitchen is ready and organized. One of the first things I do is to clean the kitchen spotless. This helps me in the organizing my kitchen. The counters, sink, and especially the floor. Now that my kitchen is clean and ready to work in it I pull out my recipe for whatever I’m going make. Read the recipe more than once to confirm you haven’t missed anything...

SAFETY IN THE KITCHEN AND DINNING ROOM

Monday, October 10, 2016 Raymond's Place  No comments

Any time you are working, playing, or just hanging out: Safety should be looked at. Most people don’t worry about being safe because they use common sense. This is a very handy way of handling your safety in life. When some rules are put in for safety you may not understand the why. I will name some rules of safety, and explain my understanding by way of personal experience. Remember you are very smart and once you see the trouble you can put yourself in you will most likely want to practice some of these rules, also some of these rules make you a safe employee to protect the customers.

Let’s start at the top; your hair. Keeping your hair short for both men and women lessen the chance of falling hair in food, also it makes it easy to keep it well groomed...

Education Helps

After college I worked at the Olympic hotel in three different departments, the first was the family type restaurant, here I made salads and sandwiches a place I didn’t really want to be, but I did my job and used what I learned to excel and warrant a transfer to Shucker’s a seafood upper class restraint in the Olympic. Here I was able to work as a team with the wait people, and management. My responsibilities at first was setting up the Shucker window. Numerous types of clams’ oysters, and prawns. I felt I was doing a fabulist job. Here after a few hours I would move to the Kitchen and prepare seafood dishes, like salmon, halibut and main lobster, I also prepared desserts like cheese cake. I put an extra bit of myself when adding strawberries...

AS RAYMOND’S COOKING EXPERIENCE CONTINUES

Monday, September 5, 2016 Raymond's Place  No comments

As the story continues I worked at Dag’s for a short time until I was laid off. I thought I was fired until an Uncle told me no, you were laid off. At the time I was young and didn’t know a lot about business. If I was to be fired I would have been told differently. Something like Raymond you have not been performing to my satisfaction, then list a number of things that would cause them to fire me like, coming to work late a lot,

Stealing,

Lying to my supervisor,

Or just not learning how to do the job properly.

From Dag’s I went to Mc Donald’s, and I was not happy there, so when my supervisor from Dag’s called be back to become his weekend night manager I accepted with pleasure. I was trained to do my job by one of the people I was supervising...

ABOUT RAYMOND

Tuesday, August 30, 2016 Raymond's Place  No comments

The story of Raymond Calderon;

Starting in the cooking field was my first job as a fry cook working in a local chain drive in called Dag’s where they made their burgers from steer meat. They used a steer as their logo. Here is where I learn to use speed and accessed to do a better job. What management did with some of the workers was have a speed contest on wrapping 18 burgers in the fast time. Watching this encouraged me to learn the same. At the time I was a part timer making the hamburger patties, a job I didn’t particular like doing, but it was my first job, and I figured I would be able to move up to cooking the hamburgers.

Cooking hamburgers seemed to be easy thing to do, but until I learned the process of cooking 18 burgers at one time, preparing the buns then putting them to...
